Are they the same of classic pancakes? No, but who cares, they are still really yummy.
Ingredients
Dry
20g of coconut flour (don't use shredded coconut)7g of cinnamon
3g of baking soda
a pinch of salt
Wet
45g of full fat coconut milk2 large eggs
15g of vanilla extract
coconut oil (in a pan to fry the pancakes)
Preparation
Mix the wet ingredients (coconut milk, eggs and vanilla extract) till it's a smooth sludge.In another bowl mix the dry ingredients to have them homogeneous blended, then add the other mix.
Prepare a pan with the coconut oil to medium heat and add a small quantity of the mix. Watch to see the bubble over the almost pancake and flip it to cook for another half minute.
Keep going for the rest of your sludge.
You will get around 4-6 pancakes of 10-12cm in diameter.
