Guacamole is paleo?

Guacamole

Well, sure it's Paleo, avocado is one of the most tasty filling for paleo recipe.
You can use for salad, to create a smooth soup or for guacamole. You can even add it to create perfect smoothie.

Avocado is fat, but not the bad fat that make you really fat and unhealthy; different research have studied the effects of this fruit and everyone give thumb ups to it.
It will lower your cholesterol, make you filled, let you NOT carve for added sugar... seems perfect.

The most simple recipe where you can use avocado is Guacamole, a Mexican dip usually eat with nachos chips. It's an old recipe, maybe not as Paleolithic but the Aztecs use to eat this.

Ingredients.

1 ripe avocado
1 tomato
1 red pepper
optional 1/2 white onion
salt

Preparation

Extract the pulp of the Avocado, simple cut in half the fruit and remove the big seed in the middle. You can remove it with a spoon or if you want to show off use a knife and firmly hit the seed with the blade; twist the blade so the seed get out of the half. Ok, it's complicate, so try it alone first.
Dice the tomato and the red pepper and minced the sweet onion; the onion can give a strong flavor to the guacamole, so find out first if your guest like it.
Add everything in a bowl, with a pinch of salt. You can use a mixer to create a smooth dip or you can simple use a fork to press everything. I usually prefer to use a blender.

If you prepare the dip too early you can add lemon juice (or better lime juice) to keep it fresh. The anti oxidant in the lemon will preserve the guacamole to become dark.
